Crust
In grinder grind 1 cup Walnuts
Add: 1 Tbsp. Lemon Juice
1 small Clove of Garlic
Process until it forms in to a ball. Press onto bottom of pan. Put aside.
Quiche
1 cup Almonds soaked overnight
1/2 Avocado
1 small Clove of Garlic
2 Tbsp. Lemon Juice
1/4 tsp. Sea Salt
1/2 cup Spinach sliced or diced
Rinse Almonds and take off skins by scalding for a few seconds and pressing off the skins when they are ready. In Food Processor make Almond Whip with Almonds & ONLY enough water to keep them whipping, about 1/4 cup.
When you get to a smooth whip add the Avocado, Lemon Juice, Sea Salt & Garlic. Process until smooth once again. Lastly, add diced Spinach & JUST MIX.
Taste to know you have a GREAT flavoured Quiche. Adjust if needed. Add this to the crust you set aside earlier and level off in pan. You may sprinkle more diced spinach over the top of the mixture now in the pan before serving.
Serve with Sauerkraut or Marinated Veggies.
